Gobo / Burdock

Sow seeds after last frosts in deeply worked soil. Plant seeds 1.25 cm (1/2 in) deep, thin seedlings to 30 cm (12 in) apart. The long slender roots can be dug in late summer and into fall. Gobo roots are delicious sliced lengthwise into quarters and pan fried in butter. Burdock is a biennial: if left to overwinter it will produce seed in its second year and then perish. Second year roots are preferred for herbal use.
